Tasting Notes

50% Pinot Noir, 25% Chardonnay, 25% Pinot Blanc

This wine shows a pale, shimmering straw hue with a fine, persistent bead. The nose offers lifted aromas of crisp apple, white peach, and lemon zest, accented by hints of chalk and delicate brioche. On the palate, it is brisk and elegantly textured, with taut acidity framing its citrus-driven fruit and a subtle creamy nuance from the lees. A gentle mineral edge carries through the finish, which is clean, lively, and persistent.

Critical Acclaim:

92 points, Wine Spectator - "A linear style, with sleek acidity lending focus to the aromatic profile of crunchy pear, lemon zest, chalk, spring blossom and yellow plum. A rich note of smoky minerality rides the lively bead and echoes on the finish. Drink now through 2019."

91 points, Wine Enthusiast - "Based in Celles-sur-Ource in the Seine Valley on the Côte des Bar, this producer's nonvintage wine is ripe despite its dry extra brut dosage. With the unusual proportion of 25% Pinot Blanc in the blend, it is smooth and soft, finishing with just the right tangy acidity and a steely texture. Drink now."

Food Pairing

Champagne Brut from the Côte des Bar’s ripe orchard-fruit profile, supple texture, and chalk-meets-Kimmeridgian minerality make it especially suited to dishes that balance delicacy with savory depth. Its combination of bright acidity, fine mousse, and subtle pastry notes complements raw or lightly cooked seafood, salty bites, and dishes with gentle creaminess, while its Pinot Noir–driven structure stands up to richer flavors. The wine pairs best with oysters, sushi, fried appetizers, roast poultry, and elegant small plates where lift, salt, and quiet complexity echo its refined, southern-Champagne character.

About the Producer

Founded in 1910 in the village of Celles-sur-Ource, Champagne Pierre Gerbais is a fourth-generation family estate now led by Aurélien Gerbais, who farms roughly 18 hectares in the heart of the Côte des Bar. The domaine is known for its meticulous, environmentally conscious viticulture—practicing organic methods, maintaining massale selections, and emphasizing the region’s signature Kimmeridgian and Portlandian limestone soils.
