Champagne Pascal Doquet is a leading grower-producer of the Côte des Blancs, known for mineral-driven Champagnes rooted in meticulous, organic viticulture. Pascal Doquet took over his family estate in 1995 and established his own domaine in 2004, today farming just under 9 hectares of predominantly old vines in top sites including Vertus, Le Mont Aimé, and Le Mesnil-sur-Oger, notably the historic parcel Champ d’Aoulettes. Certified organic since 2010, Doquet’s philosophy centers firmly on vineyard health, with extensive cover crops, minimal soil compaction, and plant-based treatments aimed at reducing copper and sulfur use. Vinification is deliberately understated, relying on hand harvesting, indigenous yeasts, primarily neutral vessels, and long aging on lees to allow terroir to speak clearly. The resulting wines are precise, energetic, and unapologetically transparent expressions of Côte des Blancs Chardonnay, reflecting Doquet’s belief that it is viticulture—not technique—that defines great Champagne.
