Tasting Notes

60% Pinot Meunier, 20% Pinot Noir, 20% Chardonnay

The nose presents orchard fruit, citrus, and light floral notes, alongside subtle brioche and a hint of almond. On the palate, it is medium-bodied with steady acidity, showing flavors of apple, pear, and lemon, supported by a gentle lees-driven texture.

Pairing Block

Food Pairing

Pinot Meunier–dominant Champagne from the Montagne de Reims offers bright acidity, supple texture, and a gently rounded, fruit-forward profile that suits dishes with freshness, salt, and moderate richness. Its lively, balanced character works naturally with seafood, fried appetizers, and simple plates like shrimp cocktail or gougères. The wine’s combination of approachability and lift allows it to handle lightly creamy or savory elements while maintaining precision and ease.

About the Producer

Champagne J. Lassalle is a family-owned grower-producer based in Chigny-les-Roses in the Montagne de Reims, founded in 1942 by Jules Lassalle. The estate was later led by his wife, Olga Lassalle, who played a key role in expanding the domaine and establishing its reputation during the mid-20th century, setting the foundation for its continued family ownership.

Today, the house remains in the hands of the third generation, led by Chantal Lassalle, with her daughter Angéline Templier serving as winemaker. The estate is notable for its long-standing female leadership and continues to operate as a récoltant-manipulant, maintaining a strong connection to its estate vineyards and its origins in the Montagne de Reims.
