Bodegas Olivares is a family estate rooted in the belief, established in 1930 by Pascual Olivares Fernandez, that Monastrell is ideally suited to Jumilla’s dry climate and poor soils. The family’s vineyards, particularly Finca Hoya de Santa Ana, are planted at high elevation (around 825 meters) on sandy, chalk-rich soils and include ungrafted bush vines dating back to 1872, preserved from phylloxera due to the soil composition. Farming is dry, organic-leaning, and largely manual, with low yields and late harvests contributing to concentration balanced by freshness from cool nights. Traditional practices such as marcottage are used for replanting, and in the cellar, Monastrell undergoes extended maceration followed by aging in mostly used oak. In addition to their reds, the estate produces a small मात्रा of rosé and a historically rooted sweet wine, while maintaining a reputation for delivering wines of notable quality and character at accessible price levels.
