About the Producer

The Monastero delle Suore Cistercensi, located near Vitorchiano in Lazio, is a cloistered Cistercian community where agricultural work, including winemaking, is integrated into a life of prayer and self-sufficiency. The nuns farm small vineyard parcels on volcanic soils using organic, low-intervention methods, producing the wine Coenobium in collaboration with Paolo Bea and his team. Their approach emphasizes manual labor, native fermentations, and minimal cellar manipulation, resulting in wines that are simple, balanced, and reflective of place rather than driven by commercial styling. The project has gained recognition not for scale or branding, but for its authenticity and consistency, offering a clear example of how monastic tradition continues to shape contemporary wine production in Italy.
