Taste Block

Tasting Notes

70% Malvasia, 15%  Trebbiano, 15% Greco

Aromas of white flowers, yellow apple, and pear lead, followed by subtle citrus and herbal notes. On the palate, the wine is light-bodied and refreshing, driven by firm acidity and a gentle mineral texture. Fruit remains just ripe and restrained, balanced by a faint almond-like bitterness that adds definition.

Pairing Block

Food Pairing

Malvasia-dominant white blends from Lazio offer light freshness, gentle aromatics, and a clean, easy texture that make them especially suited to savory dishes with moderate richness and simple Mediterranean accents. Their balance and lift complement seafood, vegetable-driven plates, and lighter pastas, while their smooth profile works well with mild cheeses and herb-focused preparations. These wines pair well with grilled fish, antipasti, salads, and casual Roman cuisine.

About the Producer

Founded in the early 17th century and based in Colonna in the Lazio region, Principe Pallavicini is one of the area’s oldest estates, farming roughly 75 hectares of vineyards across Frascati, Roma, and other nearby appellations. The estate works primarily with local varieties such as Malvasia Puntinata, Malvasia di Candia, Bombino, and Cesanese, supplemented by limited international plantings. Vineyard management follows sustainable practices on volcanic and tuffaceous soils typical of the Castelli Romani zone.
