Taste Block

Tasting Notes

Aromas of red cherry, raspberry, and dark plum lead, supported by subtle floral notes and a hint of earth. On the palate, the wine is medium-bodied and structured, with firm acidity framing ripe but restrained fruit. Tannins are fine-grained and present, lending shape through the mid-palate without heaviness. Mineral and savory notes emerge toward the finish, which is dry and moderately persistent. This will benefit with some aging, though it’s excellent now in its youth with a 45 minute decant.

Pairing Block

Food Pairing

Pinot Noir from Burgundy offers bright acidity, fine tannins, and a quietly savory profile that make it especially suited to dishes with moderate richness and gentle aromatic lift. Its balanced structure complements roasted poultry, earthy vegetables, and lightly seasoned meats, while its freshness keeps more delicate preparations, like salmon, focused. The wine pairs best with roast chicken, mushroom-based plates, grilled pork, and classic bistro-style dishes

About the Producer

Domaine Michel Juillot is a family estate now run by Laurent Juillot, farming roughly 30 hectares across Mercurey, Rully, and several Premier Cru sites. The domaine works with sustainable viticulture and hand harvesting, focusing on Pinot Noir and Chardonnay planted on limestone and clay soils typical of the area. Fermentations use native yeasts, and élevage is carried out in a measured proportion of oak to maintain structure without excessive influence.
