Tasting Notes

This charming Chinon shows a bright ruby color with good clarity. The nose is clean and expressive, offering red cherry, raspberry, and red currant, alongside characteristic Cabernet Franc notes of dried herbs, light graphite, and a subtle earthy undertone. On the palate, it is medium-bodied and structured, with fresh acidity and fine, moderate tannins supporting flavors of tart red fruit, cranberry, and a touch of pepper. The finish is dry, lightly mineral, and persistent.

Pairing Block

Food Pairing

Chinon’s bright acidity, medium body, and fruit make it naturally suited to savory, everyday fare. It pairs well with charcuterie and cured meats, where the acidity cuts through fat and refreshes the palate. Lighter red meat dishes such as grilled pork or roast chicken, risottos, or fresh pastas with olive oil and herbs complement the wine’s fruit and spice profile without overwhelming its moderate structure. Avoid overly heavy or spicy dishes that can overshadow the wine’s balance.

About the Producer

Domaine Pascal Brunet is a family-run estate in Chinon AOC, led by Pascal Brunet since 1979 and focused on Cabernet Franc grown across a range of traditional soil types, including gravel and sand terraces near the Vienne River, tuffeau limestone slopes, and flint clay plateaus. The 17-hectare estate benefits from a semi-oceanic climate and vines averaging 35–40 years of age, contributing to consistency and balance. Farming follows sustainable practices, with late harvesting to ensure full ripeness, while cellar work remains traditional, including fermentation in concrete, extended maceration, and malolactic fermentation. The resulting wines are structured yet balanced, with fresh acidity, controlled tannins, and a profile that combines red fruit, herbal notes, and mineral character reflective of the varied soils.
