Tasting Notes

60% Baga, 40% Touriga Naçional

In the glass, the 2023 Rosé Bruto Reserva shows a pale salmon color with a fine, persistent mousse. The nose is clean and focused, offering red currant, wild strawberry, and citrus peel, with light floral notes and a subtle mineral undertone. On the palate, it is precise and structured, driven by high acidity and fine bubbles, with flavors of tart raspberry, cranberry, and a hint of pink grapefruit. The texture is firm but not aggressive, with lees aging contributing a slight roundness. The finish is dry, crisp, and lightly savory, maintaining clarity and balance without excess richness.

Food Pairing

This style of sparkling rosé pairs well with foods that balance freshness and fat, particularly dishes rooted in coastal Portuguese cooking. Its acidity and effervescence cut through richness while complementing briny and lightly seasoned ingredients. It works especially well with shellfish, salt cod preparations, and lightly fried dishes, where the wine’s structure and clean finish help reset the palate between bites. The subtle red fruit profile also allows it to pair with mildly cured meats or dishes that include both seafood and pork, a common combination in regional cuisine.

About the Producer

Caves São João was founded in 1920 by the Costa brothers and developed into a significant producer through its brands Frei João in Bairrada and Porta dos Cavaleiros in Dão. The estate initially focused on wines from the Douro, but shifted to Bairrada table and sparkling wines after regulations introduced in 1930 limited Port production. Under the direction of French enologist Gaston Mainousson, the winery built a reputation for consistency and quality. Demand for wines from Bairrada and Dão declined in the 1990s, but interest returned roughly two decades later as consumer preferences moved toward fresher, more restrained styles. In 2013, the Costa family began releasing library vintages dating from 1959 to 2000, demonstrating the long aging capacity of their wines. Today, Caves São João continues to balance historical continuity with ongoing technical development, and remains the only Portuguese producer to offer a range of older vintages on the market.
