Tasting Notes

A blend of 70% Pinot Noir from 1974 plantings and 30% Gamay from vines dating back to 1953. The vineyard sits just outside Volnay, and it shows—there’s a refined, earthy edge that echoes the structure and elegance of that more famous neighbor. On the nose, the wine leads with bright red cherry and plum, joined by subtle notes of underbrush, leather, and a touch of spice. The fruit is vivid but not glossy—on the palate, juicy red berries give way to hints of forest floor and dried herbs.

Food Pairing

This Passetoutgrains is a versatile red that pairs effortlessly with a wide range of savory, everyday dishes. Its blend of Pinot Noir and Gamay gives it a medium body, fresh acidity, and earthy depth, making it especially well-suited to meals built around simple, honest ingredients.

About the Producer

Bitouzet-Prieur is a domaine built on deep roots and consistency. Vincent Bitouzet, a dedicated classicist, has spent over three decades producing wines of clarity and longevity from the heart of the Côte de Beaune, and his son François now works alongside him, carrying that legacy forward. The domaine’s 12 hectares span some of the region’s most respected vineyard sites, and their vineyard work is rigorous: organic practices, no synthetic treatments, manual harvesting, and careful selection. In the cellar, classic methods are the rule—native yeasts, limited new oak, and a hands-off approach that lets each wine speak for itself.
