Tasting Notes

80% Shiraz, 20% Plavina

The nose shows black cherry and mulberry with dried herbs, pepper, and a subtle savory edge. On the palate, it is medium-bodied and focused, balancing dark fruit depth with freshness and fine, lightly savory tannins. The finish is dry and herbal, with lingering fruit, spice, and gentle minerality.

Pairing Block

Food Pairing

Syrah-dominant wines from Croatia pair best with savory, structured dishes that balance rustic depth and refined elements. Their steady acidity and earthy, gently spicy character work well with grilled or herb-seasoned meats, tomato-based coastal stews, and mushroom-forward plates, while moderate richness and a hint of char tend to highlight the wines’ texture and lift. They also complement hearty vegetable dishes—such as roasted beets or lentils—where the wines’ freshness and savory edge keep the pairing lively and grounded.

About the Producer

Domaine Bibich is based in the town of Plastovo near Skradin, in northern Dalmatia, a historic inland pocket near the Krka River that has long supported agriculture and viticulture. The estate was founded in 1989 by Alen Bibich, at a moment when Croatian wine was beginning to reassert its identity following decades of cooperative farming and bulk production under Yugoslavia.
