Tasting Notes

34% Grenache, 33% Syrah, 33% Mourvèdre

This fresh and clean Saint-Chinian rouge shows off pretty fruits and a minerality that's palpable even on first whiff. Aromas display a mix of brambly red and dark fruit—raspberry, dark cherry, red plum skin, and blackberry—alongside notes of dried herbs like rosemary, sage, and thyme; spice that includes a hint of cracked black pepper, licorice, and wintergreen mint; plus the subtle earthy undertone, garrigue, that is often found in these wines. On the palate, the wine is medium-bodied, with a rounded entry from the Grenache, followed by the darker fruits and textures from Syrah and Mourvèdre. Acidity is moderate but sufficient to maintain balance, and the fruit remains ripe without becoming excessive or heavy. The finish is steady and persistent, and while the wine starts out juicy, it concludes with a lifted, dry finish that calls for another sip and another bite of charcuterie.

Food Pairing

Saint-Chinian reds pair well with dishes that reflect its Mediterranean origins. Its combination of fruit, tannin, and herbal notes makes it particularly suited to grilled or roasted meats, lamb, and dishes incorporating herbs such as thyme or rosemary. The wine’s structure allows it to handle richer preparations, while its balance prevents it from overwhelming the dish. It also works effectively with slow-cooked dishes where flavors have had time to integrate.

About the Producer

Château Fonsalade is a historic estate in Saint-Chinian, with origins dating to the 15th century and formally established under the Fonsalade name in 1795. Now owned by the Barbe family, the domaine takes its name from a natural spring (“Funt Salada” in Occitan) whose sodium bicarbonate-rich water has long been part of the estate’s identity. Located at the foot of the Montagne Noire, about twenty kilometers north of Béziers, the vineyards cover roughly 33 hectares across a mix of plains and hillside parcels reaching up to 350 meters in elevation. The estate sits on a geological fault, resulting in a diverse range of soils—including schist, clay-limestone, sandstone, and marl—which contribute to varied expressions across parcels. A combination of elevation, wind exposure, and proximity to both northern and maritime influences creates a cooler microclimate relative to the broader appellation. Château Fonsalade focuses on Mediterranean varieties such as Grenache, Syrah, Mourvèdre, Carignan, and Cinsault, farmed with an emphasis on low-input, sustainable practices, manual harvesting, and parcel-by-parcel vinification to preserve site expression and balance.
