Taste: In the glass, the wine shows a pale gold hue with glints of green. The aromatics are clean and expressive, opening with reductive aromas led by struck flint and a mineral edge, with layers of yellow apple, quince, honeysuckle, melon, and preserved lemon, backed by hints of flint and chamomile. On the palate, it opens with citrus and orchard fruit, leading into a mid-palate that is simultaneously bright and waxy, showing notes of lemon curd, pear skin, and crushed white flowers. The lees contact brings a roundness and quiet depth, while brisk acidity drives the wine to a saline, slightly herbal finish with a subtle touch of beeswax.



Pairing: Chenin Blanc’s natural acidity, textural depth, and subtle phenolics make it one of the most food-versatile white wines. Start by pairing it with dishes that include bright seasoning, gentle fat, or savory umami elements. Try it with grilled pork, seasoned with whole spices and garlic bread—especially if a cumin or coriander rub is involved, which brings out the wine’s floral and mineral notes. It also complements roasted chicken with lemon and herbs, seared scallops with brown butter and sage, or a cauliflower and golden raisin tagine.
