Tasting Notes

Critical Acclaim:

Burghound, Review Date: 06/2023. A spicy and very fresh nose freely offers up its array of green apple, citrus and discreet spice wisps. The delicious, highly energetic and lightly stony middleweight flavors conclude in a nicely dry, clean and sneaky long and refreshing finale. This is lovely and I particularly like the crunchy fruit. *Outstanding, Top Value*

Food Pairing

With its high acidity, minerality, and precise citrus-driven profile, this Aligoté pairs exceptionally well with seafood—think oysters on the half shell, grilled shrimp, or pan-seared white fish. Its crisp structure cuts through richness and salt, making it an ideal companion to fried seafood or smoked fish, while its clean finish keeps the palate sharp.

About the Producer

Domaine Henri Prudhon, based in Saint-Aubin in the Côte de Beaune, is a long-standing family estate rooted in traditional Burgundian viticulture and closely tied to the development of its village. Founded by Henri Prudhon, born in 1921, the domaine took shape after his marriage to Marguerite in 1945, when they combined their vineyard holdings. The estate remained focused on grape growing until the early 1980s, when their son Gérard began estate bottling, marking a shift toward greater control over quality and identity. Today, the domaine is led by the fourth generation, Vincent and Philippe Prudhon, who continue to work under Gérard’s guidance while maintaining a consistent, terroir-driven approach. The estate farms approximately 14.5 hectares across Saint-Aubin and neighboring appellations such as Puligny-Montrachet and Chassagne-Montrachet, producing both Chardonnay and Pinot Noir. Vineyard work emphasizes minimal intervention, high planting density, and manual harvests timed for balance rather than maximum ripeness. In the cellar, winemaking follows a restrained, traditional model: long, cool fermentations, moderate extraction for reds, and careful use of oak—typically limited to a small proportion of new barrels—to preserve site expression. The resulting wines reflect the structure and minerality associated with Saint-Aubin, offering a clear and consistent expression of this often underappreciated sector of Burgundy.
