Tasting Notes

This is a pale, silvery salmon hue. Aromatically, it’s expressive with crushed red currants, wild strawberry, and Rainier cherry lead, followed by floral hints of geranium and dried rose petals. The palate is clean and nervy, with racy acidity carrying flavors of tart cherry, cranberry, and grapefruit peel. A faint mineral bitterness and citrus pith note builds on the mid-palate, giving the wine a zesty, almost tonic-like precision. The finish is brisk and dry, with a lingering echo of sour cherry and crushed white pepper.

Food Pairing

Rosé from Beaujolais offers bright acidity, gentle red-fruit lift, and an easy, refreshing profile that suits fresh, herbal dishes with moderate richness. Its light structure works naturally with salads, grilled vegetables, simple seafood, and casual bistro fare, while its clean finish keeps warm-weather plates lively and balanced. A particularly seamless pairing is a herb-roasted salmon with lemon and olive oil, where the wine’s lift complements the fish’s richness and its subtle fruit notes echo the brightness of the dish without overpowering it.

About the Producer

Pierre-Marie Chermette and his Domaine du Vissoux are based in Saint-Vérand, a small commune in the southern Beaujolais region of France, located just west of Lyon and nestled in the Monts du Lyonnais. Though now widely respected for his detailed work across Beaujolais’ crus, Chermette’s operation began humbly small and has evolved steadily without chasing trends or abandoning its traditional viticulture.
