Taste Block

Tasting Notes

Aromas of black cherry, blackberry, and dark plum lead, joined by subtle notes of violet, dried herbs, and mineral undertones. On the palate, the wine is medium-bodied, with firm acidity supporting dense but well-defined fruit. Tannins are present and fine-grained, giving shape through the mid-palate without rusticity. Savory and lightly earthy notes emerge toward the finish, which is dry, structured, juicy, and balanced.

Pairing Block

Food Pairing

The firm structure and bright acidity of Teroldego Rotaliano make it an easy, breezy fit with savory, protein-driven dishes rather than delicate preparations. It pairs naturally with cured meats, fresh sausages, and pork dishes, where acidity cuts through fat and tannins remain supportive. Braised meats, roasted poultry, and mushroom-based dishes are also strong matches. Avoid heavily spiced or overly sweet preparations, which can clash with the wine’s mineral-driven profile.

About the Producer

Gaierhof is a small, family-run estate in Roveré della Luna on the northern edge of Trentino’s Piana Rotaliana, where generations of the Gaier family have farmed the land, transitioning in the late 20th century from mixed agriculture and local wine production to estate bottling focused on indigenous varieties. Best known for Teroldego, the region’s flagship grape, the estate farms organically on the Rotaliana plain using traditional pergola training, manual labor, and low yields to support soil health and biodiversity. In the cellar, Gaierhof takes a minimal-intervention approach with spontaneous fermentations, gentle temperature control, and aging in stainless steel or neutral vessels, resulting in fresh, structured wines that emphasize varietal purity and a clear expression of place and vintage rather than an international style.
