Taste: In the glass, the wine shows a pale straw-yellow color with green highlights. The nose opens with aromas of Meyer lemon, green apple, and white blossoms, followed by hints of crushed oyster shell and wet stone. On the palate, it’s light-bodied and brisk, with sharp citrus notes and a saline snap.

Pairing: Petit Chablis thrives with dishes that emphasize freshness, simplicity, and texture. Pair it with foods that complement the wine’s acidity and mineral character. Raw or prepared shellfish, such as oysters on the half shell, poached shrimp, or a scallop crudo, work exceptionally well.

Agnes, Didier et Florent Dauvissat Vignerons is based in Beine, a village just west of Chablis proper in Burgundy’s Yonne department, and at the eastern end of 1er Cru Beauroy. While the name Dauvissat is widely recognized in the world of Chablis, this domaine operates entirely independently from the more prominent Vincent Dauvissat estate. It is instead a multi-generational, family-run domaine with a quiet yet dedicated presence in the region, known for producing precise, classically styled wines from some of Chablis’ most respected terroirs.
