Description
From: Vertus, Champagne, France
Varietal: Chardonnay
Taste: Pale straw in the glass, with a fine, persistent bead. The nose opens with lemon curd, white blossom, fresh linen, tart green pear, ginger flower, and crushed chalk, buoyed by subtle notes of almond skin, fresh Croissants Aux Amandes, and sea breeze vibes. Racy and precise, this gastronomic champagne layers flavors of crisp yellow apple, Meyer lemon, and white peach, underscored by a chalky minerality and a generous figure.
Pairing: This Blanc de Blancs is a natural partner for dishes with acidity, texture, and freshness. Its mineral drive and brisk acidity elevate raw preparations like fluke with lime and olive oil or oysters with mignonette. It complements delicate seafood such as langoustine or Dungeness crab, exceptionally when prepared simply with herbs and citrus.
About: Champagne Doquet is based in Vertus, a premier cru village in the Côte des Blancs, an area revered for its chalk-rich soils and its role as the spiritual home of Chardonnay in Champagne. The domaine is officially known as Champagne Pierre Doquet, named after the current proprietor, who took over in 1995 following his father's retirement, Jacques Doquet. While the estate's origins date back to 1974 under Doquet-Jeanmaire, Pierre reshaped the domaine’s direction, focusing intensely on terroir expression, sustainable farming practices, and low-intervention winemaking.
