Tasting Notes

75% Pinot Noir, 25% Chardonnay

Critical Acclaim:

Wine Spectator, Score 92, Date 2024-12-15 "The firm, focusing spine of acidity is enmeshed with a lovely satinlike texture as this carries notes of baked white cherry and black plum fruit, grilled macadamia nut, white blossoms and candied ginger. Long and minerally on the finish. Pinot Noir and Chardonnay. Disgorged March 2024. Drink now through 2029. 500 cases imported."

James Suckling, Score 91, Date 2025-08-05 "This balanced and gently yeasty Champagne has aromas of bread crust, smoked tea and wild berries. The bubbles are creamy on the palate. Dry feel. 75% pinot noir and 25% chardonnay from Ambonnay. Disgorged July 2024. 8.5 g/L dosage. Drink now."

Jeb Dunnuck, Score 91, Date 2024-12-22 "Bright yellow/silver, the NV Champagne Grand Cru Reserve Brut is 75% Pinot Noir and the rest Chardonnay fermented and aged in stainless steel. Very well-detailed on the nose, with pure notes of pomegranate, red berries, fresh flowers, brioche, and grapefruit, it moves seamlessly to the palate, which is inviting and pure, with a clean, chalky finish. Juicy and fruity in this vintage, it has a lot to offer over the next 6-7 years."

Food Pairing

Ambonnay champagne (like this one), renowned for its rich Pinot Noir character, pairs well with a variety of foods, from classic French dishes like roasted poultry, steak, and lamb to rich seafood such as lobster and scallops. Other great pairings include soft or stinky cheeses, fried items like crab cakes, and even truffles. Try the lobster or crab as ravioli, risotto, or croquettes. Scallops, white fish, and oysters are other pairings that work well in various preparations, including being served grilled or roasted. Poultry, served roasted, grilled, or even fried, is fantastic alongside this champagne. To highlight its rich fruit and toast qualities, make sure to lean into complementary and contrasting flavors.

About the Producer

“Billiot’s wines are packed with plenty of flavor, yet at their best, they combine their depth with a rare elegance and harmony that sets them apart from many of their peers.” -Peter Liem, champagneguide.net

The NV Champagne H. Billiot Fils Ambonnay Grand Cru Brut Réserve is a grower Champagne rooted in one of Champagne’s most prestigious Grand Cru villages: Ambonnay, located on the southern slopes of the Montagne de Reims. This area is especially prized for its Pinot Noir, and the Billiot estate, now in the hands of fourth-generation winemaker Laetitia Billiot, farms 5 hectares across 18 mid-slope parcels—all but one in the most sought-after zones of the village. The estate works with 50+ year-old vines planted in a mix of limestone, clay, and chalk soils, producing wines that reflect the strength and precision for which Ambonnay is known.
