2023 Famille Savary Petit Chablis

In the glass, the wine shows a pale straw color with silver-green highlights. The nose opens with fresh notes of lemon peel, green apple, and white flowers, layered with oyster shell and crushed stone. On the palate, the wine is linear and bright, with brisk acidity supporting flavors of lime zest, green pear, and chalk.

Famille Savary is located in the village of Maligny, situated at the northern limit of the Chablis appellation in Burgundy. The Savary name doesn’t carry the centuries-old lineage of some Chablis domaines. Olivier Savary grew up in Maligny and was the first in his family to formally study enology. He attended the prestigious University of Dijon (now part of Institut Agro Dijon), where he was trained in both viticulture and oenological science. Initially, he was set on pursuing a career in enological research or working in a laboratory setting. Still, the draw of home and the opportunity to apply what he had learned to his family's vineyards changed that plan.
