Pairing: It pairs beautifully with roast turkey glazed in citrus, where the wine’s bright notes mirror the tangy sweetness of the glaze, and its mineral backbone cuts through the turkey’s richness. Herb-crusted salmon finds a perfect partner in the wine’s grapefruit and passion fruit aromas, complementing the herbaceous crust while refreshing the palate. Honey-glazed ham benefits from the wine’s fruity brightness and minerality balance, offsetting the ham’s sweet and smoky profile. For vegetarian options, butternut squash risotto’s creamy, nutty flavors are elevated by the wine’s exotic fruit and mineral qualities, while green bean almondine gains freshness from its light floral and citrus tones, complementing the nuttiness of toasted almonds.

Food Pairing

Dry Bordeaux blends of Sauvignon Blanc and Sémillon balance bright citrus-driven freshness with a subtle, waxy roundness, making them ideal with clean, delicately savory dishes. Sauvignon’s lift and herbal edge complement greens, shellfish, and lightly aromatic ingredients, while Sémillon’s texture supports gentle creaminess and soft, buttery elements. Together, they pair best with simply prepared seafood, fresh herbs, crisp vegetables, and refined, understated flavors that mirror the wine’s poise and clarity.

About the Producer

Founded in the 1930s, Château La Caussade has long been cared for by the Armand family in the hills of Sainte-Croix-du-Mont and Cadillac on Bordeaux’s right bank. The estate spans roughly 6 hectares of clay-limestone vineyard parcels, including fossil-rich slopes that naturally favor both vibrant dry whites and richly textured sweet wines. Known for producing expressive Sauvignon- and Sémillon-based whites, refined Merlot-Cabernet reds, and the region’s hallmark aromatic sweet wines.
