Tasting Notes

85% Nerello Mascalese, 15% Field Blend

Aromas open with red cherry, wild strawberry, and pomegranate, followed by dried rose, herbs, and subtle smoke. The palate is precise and lifted, balancing bright acidity and fine-grained tannins with flavors of red fruit, blood orange, and a stony, saline edge. There’s a gentle tension that carries through the finish—clean, persistent, and energetic.

Pairing Block

Food Pairing

Think of Mediterranean flavors built around olive oil, citrus, and char. Grilled lamb chops with rosemary and lemon mirror its savory lift, while roasted pork with fennel and orange complements its fruit and spice. Tomato-based dishes such as pasta alla Norma or slow-cooked ragù align beautifully with its brightness. For a lighter match, try roasted mushrooms with thyme or a lentil and eggplant stew, both of which pair with its earthy undertones.

About the Producer

Today, Eduardo farms roughly six hectares of vines split between Etna’s northern and western slopes, centered near Randazzo and Solicchiata. The vineyards, planted between 600 and 1,000 meters above sea level, are scattered across historic contrade such as Pietramarina, Barbabecchi, and Calderara Sottana. Many of these parcels are over 50 years old and still trained in the traditional alberello style on ungrafted rootstock. Soils vary from coarse, decomposed volcanic sand to pure basalt and lava ash, creating wines that carry a striking mineral tension and transparency.
