Tasting Notes

This wine pours a deep, youthful ruby with a slight purple edge. The nose is expressive, showing black cherry, ripe raspberry, and a touch of dried rose, lifted by hints of cracked pepper and a stony, granitic accent. On the palate, it is firm yet polished, with concentrated dark-berry fruit framed by lively acidity and structured, finely edged tannins. A subtle note of spice and mineral tension carries through the finish, which is long, steady, and marked by a persistent sense of freshness and depth.

Food Pairing

Moulin-à-Vent’s powerful, ageworthy style of Gamay—marked by dark fruit, floral depth, and firm tannic structure—pairs naturally with richly savory dishes and proteins with some weight. Its concentrated palate and mineral backbone complement roasted meats, earthy vegetables, and dishes with herbal or peppery notes, while its acidity keeps denser textures lifted. The wine’s presence and complexity suit grilled lamb, mushroom-driven plates, hearty poultry, and preparations where depth and umami highlight its more serious, structured character.

About the Producer

Founded in 2016 by winemaker Pierre Sérol and now run as a small, family-driven estate, Domaine de Roche Noire farms roughly 8 hectares of Gamay in the granitic foothills of southern Beaujolais. Working organically with minimal intervention, the domaine focuses on old-vine parcels rooted in sandy granite and blue-stone soils, producing fragrant, finely structured Beaujolais that emphasize purity, lift, and terroir expression. Native-yeast fermentations, gentle extraction, and careful élevage
