Les Perrières is a cooler site, planted in 1967-68. The vines are situated on the hillside overlooking the village of Savigny, near Les Champlains. Expect a structured and firm wine, pretty with a fresh nose of lemon notes, minerality, and surprising length.
Domaine Simon Bize
Domaine Simon Bize is a 22-hectare domaine, founded in 1890 in Savigny-les-Beaune. Bize is synonymous with the village of Savigny and considered by many to be its top producer as it has many of the best lieux-dits and 1er crus of the appellation.
The domaine, now run by Chisa Bize (wife of the late Patrick Bize, who put the domaine on the map) makes some of the most compelling bang for your buck Burgundy there is. The appellation is an excellent study of the effects of soil type, aspect, valleys, elevation, and slope grades on wines. In other words, Bize is one of the most masterfully made examples of Savigny, itself one of the most affordable and underrated teachers of terroir by way of Pinot and Chardonnay.
The trademark Bize house style is predominantly whole cluster with indigenous yeast fermentation. They prefer limited use of new wood for both reds and whites; though they sold many of their barrels in 2016, and the 2017s had more significant new oak influence, the 2018s have less perceptible oak on the palate. They use minimal intervention and little to no sulfur, preferring to express the fruits of the land as naturally as possible. For their reds, they've also moved toward foot treading for lighter infusions.
