From: Sicily, Italy
Tasting Notes: This honey's complex floral aromas are derived from the fragrant wildflowers that bloom on the slopes of Mt. Etna.
Pairings: Intense and versatile, this honey is fit for various uses, from breakfast to the sweetening of infusions and drinks, the most elaborate meat and fish courses, and the coupling with seasoned and blue cheeses. Also excellent on fruit and in yogurt.
About. Terre Nere's honey is made by the best bee masters of Zafferana Etnea, a village on the eastern slopes of mount Etna that boasts a long tradition of beekeeping and is among the best honey producers in Italy. To respect its precious organoleptic characteristics, their honey is not pasteurized.
Marc de Grazia, winemaker at Tenuta delle Terre Nere, on their honeys:
"After three years playing around, producing outstanding honeys, regaling our guests and visitors with them, tasting them, spreading them on French toast and pancakes, and all that wonderful morning jazz, I finally got my act together, and I’m now ready to spread the wealth and the word around. It is part of the sustainability outlook that has underlined my wines and olive oil.
Honey is the third essential Mediterranean joy and one of Nature’s wonders that man has made his own through a remarkable and gentle partnership. And our hard-working partners are in dire straights.
In Sicily, honey from Etna is very famous, as it should be, for the same reasons the wine is: the stuff is exceptionally fine, never cloying, and marvelously perfumed. Today I have a license to jar and purvey it. I’m not looking to make money on this, though eventually, it would be nice to break even!"
Tenuta delle Terre Nere is a winery in the volcanic region of Mount Etna in Sicily. The estate's proprietor, Marc de Grazia, was instrumental in elevating Mount Etna red wines to world-class status two decades ago. The winery takes full advantage of the mountain's volcanic soil and high-altitude microclimate to produce wines with minerality, freshness, and aromatic complexity.
Tenuta delle Terre Nere's philosophy is centered around respect for nature and commitment to expressing the refined and multifaceted microcosm of the ancient volcanic land. The finest workmanship in all aspects of viticulture is the first thing that sets them apart; they focus their attention on vineyard management to obtain the best and most consistent ripening, enabling them to bring home exceptionally fine grapes and that do not require invasive cellar work. Tenuta delle Terre Nere's goal is to express the character of its varieties in their specific terroir, allowing the wine's natural flavors and aromas to shine through.
