Tasting Notes

Aromas of mixed dark blackberries, raspberries, and plums, with an undertone of brambly spice and lavender, offer a preview of similar sensations on the palate of this refined, peppery wine.

Pairing Block

Food Pairing

This Malbec would pair excellently with lighter cuts of beef, cassoulet, pâtés, and roasted duck, lamb, or pork. Earthy ingredients like mushrooms, shallots, sage, rosemary, mint, and cumin will complement and bring out the wine's more fruity elements. Meanwhile, you could enjoy this wine with more everyday meals, including charcuterie dishes, chili, pot roast, meatloaf, or hamburgers.

About the Producer

This Cahors Malbec, selected by Mary Taylor Wines, comes from a single parcel called Inspiration 7.9 planted by Odile Delpon more than three decades ago on limestone and clay terraces above the Lot River. The estate is now run by her son Didier Pelvillain, who farms 52 hectares across two domaines with low yields, careful selection, and a strong focus on sustainability, currently moving toward biodynamic certification. The vines are trained in single guyot, fermented with indigenous yeasts, and handled with minimal intervention to keep the wines clean and precise. In a region once defined by volume and now by quality, Didier’s approach reflects a quiet, intuitive style aimed at freshness, structure, and clear expression of Cahors rather than weight alone.
