Taste: On the nose, this wine reveals an enticing bouquet of fresh citrus fruits, predominantly lemon zest and grapefruit, intermingled with delicate floral notes of acacia and orange blossom. Hints of green apple, pear, and white peach add complexity, while subtle yeasty and brioche undertones provide depth. The palate of the NV Debit Pet-Nat is lively and refreshing, showcasing a well-balanced harmony between zesty acidity and a subtle creaminess. Bright flavors of citrus fruits, such as lemon and lime, mingle with green apple and a touch of white peach. The wine's minerality adds an intriguing layer, while gentle herbal and white floral notes linger in the background. The finish is crisp and clean, with a lingering effervescence that leaves you yearning for another sip.
Pairing: The bright acidity and delicate flavors of the Pomalo Wine Co. NV Debit Pet-Nat make it a versatile wine for food pairings. It pairs exceptionally well with light and fresh dishes, such as salads, seafood, and soft cheeses. The wine's effervescence and zesty profile can also help to cleanse the palate when enjoying richer, cream-based dishes or fried foods.
For vegetarian options, the Pomalo Wine Co. NV Debit Pet-Nat pairs well with dishes that highlight fresh, seasonal vegetables and herbs. Try it alongside a vibrant Mediterranean salad with mixed greens, cherry tomatoes, cucumber, red onion, and a lemon-olive oil dressing. It would also pair well with grilled vegetable skewers, featuring zucchini, bell peppers, mushrooms, and cherry tomatoes, drizzled with a balsamic glaze. For a heartier option, consider pairing the wine with a creamy risotto featuring asparagus, lemon, and Parmesan cheese, allowing the Pet-Nat's acidity to cut through the richness of the dish.

About. The sun-kissed Dalmatian coast of Croatia has long been a haven for those seeking relaxation and a laid-back lifestyle. It's here that you'll find the Pomalo Wine Co., a winery dedicated to capturing the essence of "pomalo" – a Croatian philosophy that emphasizes taking it easy, slowing down, and embracing a stress-free way of life. At the heart of Pomalo Wine Co.'s offerings is their NV Debit Pet-Nat, a delightful natural sparkling wine that embodies the spirit of pomalo in every sip.
The Begović Cousins: A Winemaking Dream Team
The Pomalo Wine Co. is the brainchild of the Begović cousins, two talented winemakers from contrasting backgrounds – one hailing from the northeastern mountains of Slovenia and the other from the Dalmatian coast of Croatia. Bonding over their shared family lineage in the village of Kozice, Croatia, the cousins joined forces with Vinum to create wines that celebrate leisure, enjoyment, and fun. In short, these wines are made for "fjaka," a local term for doing nothing and embracing the pomalo way of life.
A Wine That Takes It Easy: The NV Debit Pet-Nat
Made for the first time in 2020, the Pomalo Wine Co.'s NV Debit Pet-Nat is crafted from 100% Debit grapes, an indigenous Croatian variety known for its yellow-gold hue and high yields. Grown in the sun-drenched vineyards near the historic town of Šibenik, the Debit grape benefits from a Mediterranean climate, fertile red and brown topsoil, and a rugged limestone foundation.
Taking a minimal intervention approach, the hand-harvested grapes are destemmed, macerated on the skins for five days, and spontaneously fermented in stainless steel tanks. The wine is then bottled before fermentation is complete and left to age for five months on the lees. The result? A refreshing, zesty Pet-Nat that captures the spirit of the pomalo lifestyle.
