Taste: Bright and vibrant on the palate, the wine opens with aromas of rose petal, wild blueberry, and red cherry, intertwined with baking spice, fresh earth, and a touch of leather. The texture is supple yet lively, carrying the lifted fruit and spice through a core of fine, natural tannin. The old-vine depth and Solera method bring an added dimension—a layering of freshness and maturity. The finish is long and savory, marked by red and blue fruit tones, subtle minerality, and subtle dried herbs and cocoa.
Pairing: This old-vine blend’s balance of vivid fruit, spice, and earthy nuance makes it want to pair with foods that highlight slow-cooked depth or charred, rustic flavors. Think of meals with layered seasoning and moderate richness. It’s particularly well suited to dishes like grilled lamb with roasted peppers and garlic, or braised pork shoulder with paprika and spices.
About: Garage Wine Co. is based in the Maule Valley of Chile, a region renowned for its revival of old-vine viticulture and minimal-intervention winemaking. The project was founded in 2001 by Derek Mossman Knapp, Pilar Miranda, and Alvaro Peña, three friends who began making wine on a small scale in a garage in Santiago—hence the name. What began as a modest side project evolved into one of Chile’s well-known independent wineries, known for championing small growers, dry-farmed vineyards, and a transparent, terroir-first approach to winemaking.
