Description

From: Montagny-lès-Beaune, Burgundy, France
Varietal: Chardonnay, Aligote

Taste: The wine appears pale straw with persistent bubbles and a fine mousse in the glass. The nose is lifted and fresh, offering notes of green apple, white peach, and lemon zest, followed by subtle undertones of almond, brioche, and chalk. On the palate, it is clean and brisk with flavors of crisp pear, citrus peel, and green plum, supported by a light creaminess from lees contact. A touch of salinity and minerality weaves through the mid-palate, leading to a bright, dry finish marked by high acidity and a lingering echo of orchard fruit.

Pairing: When pairing, prioritize dishes with light to medium textures, a saline edge, or fresh herbs. Shellfish and seafood are natural partners—think oysters, seared scallops, or shrimp crudo with citrus dressing. Vegetable-based dishes such as asparagus with lemon vinaigrette or a spring pea risotto align with the wine’s brightness and finesse.

About: Veuve Ambal is based in Montagny-lès-Beaune, just south of Beaune in Burgundy’s Côte d'Or. It is the largest producer of Crémant de Bourgogne and one of the region’s most technologically advanced sparkling wine houses. The winery was founded in 1898 by Marie Ambal, a pioneering figure in French wine history who returned to her Burgundian roots after spending years in Paris.
