Description

From: Cramant, Chouilly and Le Mesnil-sur-Oger, Champagne, France
Varietal: Chardonnay

Taste: The result of this careful vinification and aging regime is a Champagne of incredible depth, complexity and richness. In the glass, the wine displays a light gold color with a steady bead of tiny, uniform bubbles. The nose is expressive with a complex mix of aromas: yellow orchard fruits, white flowers, chalk and citrus all underpinned with notes of biscuits and toast. On the palate, the Cuvée Prestige showcases its Grand Cru pedigree with a soft, persistent mousse, mouthwatering acidity that is perfectly balanced with a rich, round mouthfeel. The finish is elegant, graceful and refreshing. A world-class Champagne from an artisanal family producer, the Diebolt-Vallois Cuvée Prestige is nothing short of brilliant.

(This bottle is an official Extra Brut selection. It was featured in November 2024.
From chalk-based Grand Cru sites in Cramant, Chouilly and Le Mesnil-sur-Oger, this is a superb slice of the Côte des Blancs that effortlessly blends creamy texture and fine-cut minerality. 3-5 g/L dosage.)

Pairing: Some classic pairings work amazingly each time, such as crab cakes, briny oysters, sole piccata, grilled sea bass, Comté cheese, and fried foods. Some specific pairing ideas to use for inspiration with this wine include serving it alongside dishes like smoked salmon or salmon Rillettes, sushi, seared scallops, fried fish (such as cod or halibut), grilled shrimp, fried or roasted chicken, lobster, and even macaroni and cheese.

About. Diebolt-Vallois is a small, family-run Champagne house based in the Grand Cru village of Cramant, in the Côte des Blancs. With just 11 hectares—mostly in prime Chardonnay terroir—the estate produces finely textured, mineral-driven wines rooted in chalk soils and southeast-facing slopes. While Chardonnay is the focus, they also farm small plots of Pinot Noir and Meunier in the Montagne de Reims and Côte des Bar. Farming is a hands-on and traditional process, utilizing natural malolactic fermentation and low dosage, reserve wines age in large oak casks deep in chalk cellars. Founded by Jacques Diebolt in 1959, the domaine is now run with equal dedication by his children, Arnaud and Isabelle, who personally manage every aspect of the process. Diebolt-Vallois is a benchmark for artisanal grower Champagne from the Côte des Blancs.
