From: Jerez, Spain
Varietal: Palomino
Tasting Notes: It’s easy to notice the Fino background of this wine. Maritime notes, some sea air, but also plenty of round notes like (salted) caramel, runny honey, and almonds. Subtle notes of flor. Hints of dried apricot and a soft layer of polished oak. Surprisingly creamy, warm, and nutty on the palate, with fairly low acidity and just a very soft tangy edge in the background. Hazelnuts and almonds. Hints of toffee. Hazelnuts, almonds, and honey-coated peanuts. A very light hint of olive brine at the end. Medium finish.
"This is an old wine that has the particularity of having both aging processes. It was Fino during three years and then started the oxidation process for at least five years." –Wine Spectator, 91 points
Pairing: Excellent on its own as an aperitif or with chicken or beef consommé. Or, our personal favorites, pair with savory Asian cuisine. Soup dumplings, dim sum dishes like chive/scallion/pork dumplings, ramen, pho, and many more!
About. Gutiérrez Colosía, a Sherry firm based in the town of El Puerto de Santa María, traces its roots back to 1838. For much of the twentieth century, the firm operated as an almacenista, aging and selling their wine to larger bodegas. It wasn't until 1997 that Juan Carlos Gutiérrez began bottling wines under his own label, Gutiérrez Colosía. The bodega benefits from being located on the banks of the Guadalete River, very close to where it empties into the Bay of Cádiz, where the resulting humidity produces a healthy, intense flor and distinct saline character in the resulting wines. Gutierrez Colosia's Amontillado Seco is the result of eight years of ageing. The first three are spent as a fino, with the oxidisation process to become an Amontillado taking a further five.
