Taste: The 2024 Domaine du Cros “Lo Sang del Païs” Rosé is not your typical delicate pink wine. Made from the local Fer Servadou grape, it delivers energy and clarity with a savory edge. Its vivid color hints at what’s to come—bright red fruit aromas, especially blackcurrant, along with cracked pepper and a faint metallic (hint: iron) note that reflects the region’s iron-rich soils. The palate follows through with the same punchy mix of fruit and spice, anchored by a crisp line of acidity and a touch of watermelon on the finish. This is a rosé that feels purposeful as well as pretty, built with the same character and intention as the red wine it echoes. Direct, fresh, and unmistakably tied to its rugged mountain origin.
Pairing: Marcillac rosé, like this one, is a versatile food wine thanks to its bright acidity, peppery edge, and vibrant red fruit character. It’s well-suited for casual aperitifs—think pork rillettes, charcuterie, or a crisp salad with vinaigrette. For mains, it pairs naturally with grilled or herb-roasted chicken, baked salmon, or duck dishes with a touch of fruit.
About. Domaine du Cros, with its 33 hectares, is the largest independent producer in the appellation and Philippe Teulier and his family have been instrumental in reestablishing the reputation of Marcillac’s wines. Philippe Teulier’s vines lie at elevations as high as 450 meters on a few different hillsides that surround the village of Clairvaux. Much of his vineyard is terraced and the soil is an iron rich clay known locally as “rougier” with outcroppings of limestone. His wines are made from one grape type, the local grape of Marcillac, Fer Servadou.
