Description
From: Letymvou, Paphos, Cyprus, Greece
Varietal: Xynisteri
Taste: This Xynisteri pours a pale straw with silvery edges. The nose opens with delicate aromas of lemon blossom, mountain herbs, and white stone fruit, followed by crushed shell and faint anise. On the palate, the wine is brisk and precise, showing notes of green pear, lime peel, and chalk. A subtle leesy roundness adds texture through the mid-palate without muting the bright acidity. The finish is crisp and mineral, with lingering impressions of citrus zest, fennel, and salt-dusted stone.
Pairing: Xynisteri is a versatile wine that pairs well with dishes where acidity and texture are important. It pairs particularly well with coastal Mediterranean cuisine, such as grilled white fish, octopus with lemon and oregano, or shrimp with garlic and herbs.
About: Makarounas Vineyards is situated in the village of Letymbou, approximately 14 kilometers east of Paphos in western Cyprus. This family-run estate represents four generations of viticultural history, rooted in village life and the rhythms of the land. While the winery itself was formally established in 2015 by Stavros Makarounas, the family's connection to vine-growing dates back decades. Today, Makarounas is one of the most distinct voices in Cypriot wine, producing expressive, site-specific wines exclusively from indigenous grapes and their estate vineyards.
