Taste: In the glass, the wine is pale yellow with a silvery rim. On the palate, it’s bright and direct, showing a taut, linear texture with flavors of lemon pith, quince, and saline minerality.
Pairing: This Chenin’s lean frame and sharp mineral drive call for dishes that mirror its energy or provide soft contrast. Start with general principles: match its acidity with citrus-forward or briny components, avoid overly rich sauces, and look for textural tension.
About. Over the past decade, Fredrik’s daughter Lena has taken on a greater role in both vineyard and cellar work, and represents the newest generation at Domaine Filliatreau. She has begun to release small-production natural wine cuvées under her name while remaining involved with the core estate. These wines are made with fruit from the family’s organically certified vineyards and reflect a more experimental, natural-leaning approach.
