Taste: In the glass, the wine presents as a pale gold with green highlights. The nose opens with notes of lemon zest, green apple skin, and crushed oyster shell, layered over subtle floral notes and a hint of white peach. On the palate, it’s taut and linear, with bright acidity driving flavors of lime blossom, Anjou pear, and wet stone. Lee's contact adds a faint roundness mid-palate, but the wine quickly snaps back into a chalky, saline finish. Tension, clarity, and lift are the core of this vintage.
Pairing: The wine’s crisp acidity, saline finish, and mineral depth make it a strong partner for dishes that feature shellfish, gentle brininess, or creamy textures that benefit from lift. Classic pairings include oysters on the half shell, Dungeness crab with lemon butter, or grilled sea bass with fennel and citrus.
About: Famille Savary is located in the village of Maligny, a commune situated just north of the town of Chablis, in the northernmost part of Burgundy’s Yonne department. Though relatively new by Burgundy standards, the estate has quickly established itself as a benchmark for quality and precision in Chablis. Founded in the early 1980s by Olivier and Francine Savary. Olivier, the son of cereal farmers, decided to pursue viticulture after being influenced by the wines and mentorship of Chablis legend Jean-Marie Raveneau.
