Taste: In the glass, the wine is a pale lemon-green with silvery reflections. Aromas are bright and lifted, showing grapefruit zest, lemon peel, and white flowers with a hint of fresh-cut herbs and crushed stone. On the palate are citrus, green apple, and traces of gooseberry. The acidity is lively and finely tuned, carrying through to a lingering finish that combines minerality with a delicate saline touch.



Pairing: Sauvignon Blanc from Quincy pairs well with dishes that highlight freshness, brightness, and clean flavors. It thrives alongside foods with a citrus and herbal character or those that offer gentle richness to balance its acidity. Avoid heavy cream sauces or heavily spiced preparations that could overwhelm its clarity; instead, look for ingredients that bring lift and texture. This cuvée works beautifully with grilled white fish, such as sea bass or sole, finished with lemon and olive oil. 

About: Domaine de Chevilly is located in the commune of Méreau, just outside the small village of Quincy in France’s Loire Valley. This part of the Loire, situated along the Cher River, is recognized as one of the first appellations granted AOC status in 1936, just after Châteauneuf-du-Pape. Quincy remains a lesser-known area of the Loire, producing Sauvignon Blancs that blend aromatic lift with minerality and freshness, shaped by its sandy, gravelly soils.

The estate covers roughly 11.5 hectares, all within the Quincy AOC. The vines average around 25 years of age, rooted primarily in light, sandy soils with patches of clay that warm quickly and encourage early ripening—ideal for Sauvignon Blanc in this cooler zone. Domaine de Chevilly’s wines have long been regarded among the most precise and consistent in the appellation, known for their balance of texture and freshness.
