Tasting Notes

This shows a pale straw color with slight green highlights in the glass. The nose opens with citrus peel, white grapefruit, and crisp orchard fruit over a mineral base of wet stone and a light flint note. On the palate, the wine is clean and medium-bodied, driven by lemon, pear skin, and subtle herbal tones balanced by brisk acidity. The finish is focused and persistent, marked by citrus pith, crushed limestone, and a faint smoky edge typical of Pouilly-Fumé’s limestone and silex soils.

Pairing Block

Food Pairing

Pouilly-Fumé’s tense acidity, flinty minerality, and precise citrus-herbal profile make it a natural partner for dishes built on freshness, purity, and subtle aromatics. Its mix of lemon zest, green fruit, and smoky minerality complements delicate herbs, bright vegetables, and simply prepared seafood, while its linear structure cuts cleanly through light cream or gentle richness. The wine pairs best with goat cheeses, oysters, grilled white fish, and refined vegetable-driven plates where clarity, lift, and a hint of smokiness mirror its focused, limestone-driven character.

About the Producer

Château Favray is located in Saint-Martin-sur-Nohain, a commune just west of Pouilly-sur-Loire in the central Loire Valley. The estate sits on a limestone hillside above the Nohain valley, a sector long recognized for producing Sauvignon Blanc with clarity, lift, and a distinct mineral edge. Although the château dates back centuries, the revival of the estate started in the early 1980s, when the vineyards were replanted after lying fallow for nearly a century.
