Description

From: Yakima Valley, Washington
Varietal: Cabernet Sauvignon, Cabernet Franc, Merlot, and Malbec

Taste: On the nose, it offers a bouquet of dark berries like blackberry and blackcurrant, complemented by ripe plum and subtle hints of spice and cedar. The palate is a blend of the dark fruit, underscored by dried cherry and sweet plum nuances. The wine's balanced acidity and smooth tannins contribute to a full body, with lingering notes of cinnamon and cedar on the finish.

Pairing: Its firm tannins and deep fruit profile pair well with grilled and roasted meats, such as ribeye steak, lamb chops, braised short ribs, and roasted pork. The fat in these dishes softens the tannins, allowing the wine’s dark fruit and spice notes to shine. Umami-rich foods like aged cheeses (cheddar, gouda), mushrooms, and truffle-infused dishes further enhance the wine’s complexity, complementing its earthy undertones. The herbal notes from the Cabernet Franc component make it a great match for dishes seasoned with rosemary, thyme, or sage, such as herb-crusted lamb or mushroom risotto.

About: Justin Neufeld's winemaking began during his academic years at the University of Washington, where he pursued a degree in Microbiology. During his junior year, he developed an interest in viticulture and enology, leading him to delve into independent research on the subjects. This newfound passion prompted Justin to return to his roots in the Yakima Valley after graduation, where he sought to immerse himself in the burgeoning wine industry.

In 2008, Justin and his wife, Brooke, founded JB Neufeld Winery. While Justin honed his skills as a winemaker for other established wineries, JB Neufeld began as a side project fueled by their vision. Their mission was clear: to produce Cabernet Sauvignons that capture the spirit of the Yakima Valley.
