Taste
: The 2021 presents a deep purple hue. It opens with enticing black cherry, ripe plum, and cassis notes, underscored by a delicate spiciness reminiscent of cedar and pepper. Subtle earthy undertones, hints of graphite, and a whisper of fresh herbs add depth and complexity. The palate is a medium to full-bodied structure with a refined elegance. Flavors of juicy blackberries and red currants intertwine with savory elements of tobacco and a touch of cocoa. The tannins are polished and well-integrated, providing a silky texture that balances the wine’s bright acidity. A gently spiced finish, with lingering notes of oak and minerality.

Pairing: It’s essential to match the wine's weight with dishes of similar richness, while the wine’s tannins work best with foods containing some fat to soften their structure. The dark fruit and earthy notes in the wine complement meals with similar flavors, while its acidity balances creamy or savory dishes. However, it’s best to avoid overly spicy or intensely hot foods that might overwhelm its nuanced profile.

About: Château de Janicon is a wine estate in the Graves appellation of Bordeaux, France. The estate's history dates back to the Middle Ages when it was known as Grandes Bos and recognized for producing wines of "finesse, body, and pronounced bouquet." The village of Castres, where the château is situated, lies along the ancient Via Aquitania, a Roman trade route that facilitated the exchange of goods and culture.

The estate's 16th-century home and cellars are surrounded by approximately 100 acres of mixed vineyard land and wild forest featuring centuries-old oak and chestnut trees. In the 1980s, the Rochet family revitalized the property and has since maintained its legacy of quality wine production.
