Taste: The wine pours a deep garnet red. Aromas lead with dark cherry and a subtle sanguine note, accented by a faint, savory earthiness. On the palate, it shows an energetic attack of cherry and cranberry, giving way to spice elements of cardamom, white pepper, and a touch of tarragon.
Critical Acclaim: “Dolores must be the patron saint of elegant Pinot Noir, as this beautiful wine will make you want to light a candle in her honor. The wine's raspberry and strawberry aromas are punctuated by wisps of cedar, watermelon rind and almond roca. Frisky acidity and plush tannins back flavors of nectarines, cherries and saline. Amen.” 94 Points, Michael Alberty, Wine Enthusiast
Pairing: The structure and spice profile of the St. Dolores makes it versatile for richly flavored dishes that still rely on balance. Try to lean toward roasted meats or game with herbal accents, incorporate spice or pepper elements, and don’t shy away from earthy or savory pairings.
About: J.K. Carriere is based in Newberg, within Oregon’s Willamette Valley, where founder and winemaker Jim Prosser has shaped the estate into one of the valley’s distinctive small producers. The winery was established in 1999, named after Jim’s grandfathers J.K. Prosser and Paul Carriere, as a nod to the family’s influence on his path.
