Taste: Pale straw with green reflections, the wine opens with aromas of pear skin, green apple, and white peach layered with fresh herbs and a faint almond note. On the palate, it’s precise and medium-bodied, with a lively core of citrus and orchard fruit supported by a savory, saline edge that speaks directly to the keuper marl soils. Lees contact lends a gentle creaminess through the mid-palate, balanced by crisp acidity. The finish is long and clean, marked by crushed stone and a light herbal lift.
Pairing: Dry, mineral-driven Silvaner is one of the most versatile food wines in Germany. In general, pair it with dishes that feature fresh herbs, gentle acidity, or a subtle briny element, and avoid overly heavy sauces.
About. Hans Wirsching is based in Iphöfen, a historic winegrowing town in the Franconia (Franken) region of northern Bavaria, Germany. The estate is one of Franconia’s most prominent and longstanding producers, with a lineage of family ownership stretching back to 1630. Today, Dr. Heinrich Wirsching and his daughters, Andrea and Lena, oversee the winery, making them the 14th generation to lead its vineyards and cellars. Under their direction, the estate has continued to refine its profile as a specialist in classic Franconian varieties, particularly Silvaner, while also producing notable Rieslings and red wines.
Located along the southwestern slopes of the Steigerwald, the area has been cultivated for wine since at least the Middle Ages, when ecclesiastical holdings dominated vineyard ownership. The Wirsching family’s continuity through centuries of political, economic, and agricultural change has allowed them to preserve traditional vineyard sites while steadily modernizing cellar practices. Their transition from small-scale, mixed agriculture to a dedicated wine estate accelerated in the 20th century under Hans Wirsching, who revitalized the business in the post-war era.
