From: Meursault, Côte de Beaune, Burgundy, France
Varietal: Aligote
Taste: In the glass, this Aligoté is pale gold with green reflections. The nose opens with sharp citrus. Think lemon peel and preserved lime, layered over crunchy green apple, white flowers, and a faint herbal note reminiscent of tarragon. On the palate, the wine is brisk and linear, with high-toned acidity driving a core of grapefruit pith, pear skin, and wet stone. A light, leesy texture adds mid-palate breadth without softening the wine’s taut framework. The finish is focused and mineral, with a saline lift and lingering notes of lime blossom and chalk.
Pairing: Aligoté’s naturally high acidity, light body, and savory-mineral edge make it a strong pairing candidate for dishes that emphasize freshness, acidity, or herbal brightness. Aim to balance its crisp profile with preparations that use citrus, brine, or crunchy textures.
