Taste: In the glass, it is a brilliant ruby color of moderate depth. Aromas of red cherry, raspberry, and wild strawberry, accented by subtle notes of dried rose, clove, and a hint of forest floor. On the palate, the wine is lithe and precise, emphasizing freshness over weight. Tart red fruit carries through with a fine line of minerality and a touch of spice from the oak. The tannins are silky and finely knit, supporting a lively core of fruit that unfolds with air. The finish lingers with red currant, savory herbs, and a clean, chalky edge that reflects the limestone-rich soils of Chorey and Savigny.
Pairing: This style of Burgundy has a light to medium body and bright acidity, making it highly versatile at the table. When pairing, aim for dishes that echo its balance of red fruit, freshness, and subtle earthiness.
About: Domaine Tollot-Beaut is based in the village of Chorey-lès-Beaune, in Burgundy’s Côte de Beaune, where the Tollot family has cultivated vines since the late 19th century. The family’s winemaking lineage began in the 1880s, when François Tollot first planted vineyards around Chorey. His son, Alexandre Tollot, followed in his father’s footsteps and later married Aurélie Beaut, uniting two long-established local families. This union gave rise to the domaine’s name: Tollot-Beaut.
