Description
From: Savigny-lès-Beaune, Côte de Beaune, Burgundy, France
Varietal: Pinot Noir
Taste & Critical Acclaim: In the glass, the wine shows a medium ruby hue with garnet reflections near the rim. The nose opens with red cherry, wild raspberry, and blackcurrant, supported by savory undertones of forest floor, dried herbs, and crushed stone. As it evolves in the glass, layers of violets, rose petals, and iron-rich minerality become more pronounced. On the palate, it is medium-bodied and precise, with fine, chalky tannins and vibrant acidity. The mid-palate reveals flavors of red plum skin, cranberry, and subtle baking spice, followed by a finish with forest floor, blood orange, and stony minerals. The wine is elegant but structured, built to age, and shows remarkable balance in its youth.
Note from Erin, Champion Wine Cellars, April 2025: While it is drinking well now, it is a bit reductive. So let it breathe, it does need air. Open it and enjoy a glass or two right away (or decant for about 45 mins), and come back over the next 2 days to see its full character develop - it gets silkier and prettier both texturally and aromatically.
"The 2021 Savigny-lès-Beaune 1er Cru Aux Serpentières is a strong effort, mingling aromas of sweet berries, plums, orange zest, rhubarb, peonies and spices in an inviting bouquet. Medium to full-bodied, ample and satiny, with a fleshy core of fruit, supple tannins and lively acids, it's one 2021 that will reward bottle age.” 92 Points, Robert Parker, Wine Advocate
Pairing: This wine’s balance of acidity, earthy structure, and red fruit purity makes it a versatile partner at the table. Classic Burgundian pairings such as roasted guinea fowl or duck with a cherry or red wine reduction work beautifully, highlighting the wine’s lift and savory notes. It’s equally suited to dishes with earthy components—try it alongside a lentil and caramelized onion stew, or a roasted beet salad with hazelnuts and balsamic.
