The Catena Appellation La Consulta Malbec showcases the family's commitment to high-altitude viticulture and meticulous winemaking techniques. The grapes are sourced from the La Consulta Vineyard’s 35 year old vines, situated at 3,592 feet in the Uco Valley, where intense sunlight and cool nights contribute to the wine's hallmark deep purple color and rich aromatics. The vineyard’s alluvial soils, composed of 80% sand, 10% clay, and 10% silt, are ideal for producing concentrated, well- structured Malbec. After cold maceration at 50oF for 2-5 days, the wine undergoes fermentation for 8-14 days, followed by a post-fermentation maceration lasting 3-10 days. The wine is then aged for 6-8 months in French oak, with 15-35% new, second, and third-use barrels, enhancing its velvety tannins and complex flavor profile.
