From: Wachau, Austria
Varietal: Riesling
Tasting Notes: We love Rosenthal Wine Merchant’s description of Fischer’s style: “Though they show notable concentration, Fischer’s wines do not lead with power; rather, they are built around a tight helix of rapier-like acidity and intensely saline minerality, emphasizing kinetic thrust over sheer richness.”
The tensile, saline 2020 Riesling Federspiel measures at 12% alcohol with 3.8 grams per liter of residual sugar, which counterposes smoky, clinging minerality with torpor-conquering acidity to create an irresistible sense of tension. Nuances of stone fruit coalesce with the wine’s well-balanced acidity and ever-so-slightly sweet finish.
Pairing: This recipe for Crisp Chicken Schnitzel With Lemony Herb Salad by Melissa Clark of the NYT. The wine’s strong, balanced acididty will mirror the freshness of the herbal and citrus components in the dish. At the same time, peach and apricot notes will present a satisfying contrast to the crispy bites of chicken.
