From: Mâcon-Chaintré, Burgundy, France
Varietal: Chardonnay
Tasting Notes: The nose of this wine is delicately expressive, with notes of quince, grapefruit, orange zest, and white blossom. Each sip reveals flavors of pear, apple, grapefruit, and lemon zest, alongside a focused minerality and lively acidity. This wine embodies the trifecta of body, length, and balance that we’re looking for in well-made wines from the Mâcon.
Pairing: This is a bright, aromatic, and smooth wine that will pair well with white fish like sea bass, scallops, and lighter fare—especially goat cheese salads. It would also pair beautifully with a nice, simple roasted chicken.
One pot meals should get more love, don’t you think? It can save you time and effort by only using one pan, which also concentrates the flavors into a delicious final dish. The carmelized onions in Yasmin Fahrgive’s Skillet Chicken with Mushrooms and Caramelized Onions recipe off those silky sweet notes, while the mushrooms are just the right umami bomb that will pair perfectly with this wine.
About. For thirty years, Pascal Berthier has made expressive, terroir-driven reds and whites from his plots in Beaujolais as well as around the Mâcon in southern Burgundy. Committed to sustainable farming and viticultural practices, Pascal seeks to return to his roots, reduce his footprint, and rediscover the tastes of long ago. His motto is, “never stop listening to my land! My vineyard is a part of me just as much as I am a part of it.”
“I always needed to be close to my land,” he says. “Living here is amongst the generosity of nature is a luxury…[nature] instills a different understanding of time that fosters the importance of patience and tenacity. I want to take care of these terroirs in a way that honors the conscientious, hardworking heritage of the area so that each sip of wine brings pleasure and truth.”
Berthier makes four wines including this Mâcon-Chaintré “Roxanne,” another Mâcon-Chaintré called “Les Champs,” a Beaujolais Blanc, and a Saint-Amour. The 2020 Mâcon-Chaintré “Roxanne” comes from vineyards at the edge of Pouilly-Fuissé. The wine was fermented in tank to preserve freshness and terroir.
