Taste: Aromas open with green apple, quince, and citrus peel layered with floral notes and a touch of bitter orange from lees aging. The palate is dry and taut, with its acidity providing lift. On the palate is orchard fruit, lemon zest, and subtle tones of fresh bread and almond carry through to a long, linear finish.
Pairing: When pairing Crémant de Loire, the key is to match its acidity and bubbles with foods that have richness or salt, avoid heavy sweetness, and use its freshness to highlight texture.
Producer: Maison Bodet-Herold is based in Montreuil-Bellay, on the right bank of the Loire. The Bodet family has held vines in this area since the late 1800s, and today the work continues under the direction of Etienne Bodet. He represents the fifth generation of the family to grow vines here, with his focus now set on Cabernet Franc and traditional-method sparkling wines.
The first sparkling release under the maison was Physis in 2017, a Crémant de Loire, a blend of 90% Chenin Blanc and 10% Grolleau. The project has continued with additional vintages, always emphasizing the technical rigor required for high-quality sparkling production in the Loire.
