Description

From: Savigny-les-Beaune, Burgundy, France
Varietal: Pinot Noir

Taste: The bouquet offers an enticing array of small red and black fruits such as blackcurrant, cherry, and raspberry. Floral notes of violet intermingle with subtle hints of earth, spice, and a touch of oak, adding complexity to the wine's aromatic profile. On the palate, this wine is medium-bodied with a discreet tannic structure. The fruit flavors from the nose carry through, accompanied by a delicate minerality and an elegant hint of Morello cherry. The acidity is well-integrated, providing freshness and balance, while the finish is persistent, showcasing the wine's depth and finesse.

Pairing: Given its structure and fruit-forward profile, the 2019 L'Embellie Chantal Martin Savigny-Les-Beaune Rouge pairs well with a wide range of dishes. Red and white meats, poultry, game, and rich, earthy dishes are all great choices. The wine's balanced acidity can also complement tomato-based sauces and hearty pasta dishes. For a regional pairing, consider classic Burgundian dishes such as coq au vin, boeuf bourguignon, or oeufs en meurette (check out the Eggs Poached in Red Wine recipe below). The wine's fruit and earthy notes will harmonize well with these rich, savory flavors. Vegetarian pairings can include mushroom risotto, eggplant Parmesan, or a lentil and vegetable stew. The earthiness of the mushrooms or the heartiness of the lentils will complement the wine's fruit and structure. For a lighter option, consider a warm goat cheese salad with toasted walnuts and a raspberry vinaigrette, which will echo the wine's fruity and floral notes.

About. Domaine l'Embellie, formerly known as Domaine Michel Martin, may be considered the new kids on the Burgundy block, but they are making a name for themselves with hard work, dedication, and a commitment to quality. Today, we explore the 2019 L'Embellie Chantal Martin Savigny-Les-Beaune Rouge, a wine that reflects the history, terroir, and the passion of its winemakers.

A Family Legacy: Domaine Michel Martin dates back to the time of Michel's grandparents, with landholdings in the Hautes-Côtes de Nuits and the Côte de Beaune. After the domaine was split in 2002, Michel and his wife Chantal took over 4.5 hectares of vineyards in Chorey-lès-Beaune, Savigny-lès-Beaune, and Beaune. Chantal, once a nurse, transitioned into winemaking full time and obtained a BPREA diploma in viticulture and oenology.

Viticulture Intégrée: With a focus on respecting the environment and protecting the vines, the domaine practices integrated viticulture, minimizing the use of chemicals, plowing the soil for weed control, and hand-harvesting the grapes. Chantal is also interested in biodynamics and preventive actions, aiming to guide and support the vines rather than forcing them.

The Terroir: Savigny-lès-Beaune is a large village in the Côte de Beaune sub-region of Burgundy. The Rhoin river valley provides south-facing slopes and excellent viticultural land, protected by the hillsides of Battois and Corton. The region is predominantly known for its red wines made from Pinot Noir, offering reliable quality and value.
