Varietal: Minustellu/Minustella aka Graciano
Tasting Notes: The prettiest Graciano I’ve ever tasted. Utterly elegant and voluptuous, it is deep and dark, with notes of mulberry, plum, and violets. The presence of sweet spices and black tea dance on the palate and its gently chewy tannins come in toward the end to preserve its lingering finish. It tastes familiar and yet completely unlike anything else, a real treat.
Pairing: Civet de Sanglier (wild boar casserole) is basically Corsica’s “national” dish and would be a lovely accompaniment if you were up for the cooking challenge. For a vegetarian pairing, a winter lentil stew would be hearty enough to stand up to this wine’s depth.
